Have a couple bananas going brown on you? Don't throw them out! Make banana bread instead!
Ingredients:
2 cups flour 1/2 cup brown sugar
1/2 cup sugar
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
3 ripe bananas
1/2 cup oil
1/4 cup milk
1 teaspoon vanilla
2 eggs
1/2 cup chopped walnuts (optional)
or
1/2 cup chocolate chips (optional)
Directions:
Stir together oil and sugars. Add eggs, vanilla, and bananas. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Then, add the flour mixture and milk to banana mixture. Stir in nuts or chocolate chips, if desired.
Pour mixture into greased Rice Steamer Bowl. Cover bowl with aluminum foil. Fill water reservoir to maximum level. Place rice bowl into steamer. Cook for 1 hour 25 minutes. May need less or more time depending on the steamer. Check it at one hour, first. May take as long as 1 hour, 40 minutes. Remove from steamer when toothpick inserted in the middle comes out clean. Either, let it cool or eat warm!
I hope you enjoy this banana bread recipe. It's one of my favorites! It's also a good way to not waste food. I never mind buying more than enough bananas, because I know they will be used up. And if you find that your bananas are getting old, but you don't have time to bake. Just put them in your freezer until you are ready to use them. When you go to make the banana bread, just first let the bananas sit out (perhaps in a bowl) for a few hours or until completely thawed.
Also, remember... Be Creative! You can add a number of things to this to make it yours: raisins, peanut butter, varieties of nuts, bits of fruit.. Anything!
